Recipe (Serves 8–10)

Instructions

  1. In a large pot, sauté onion in olive oil until soft.
  2. Add chicken, bay leaves, chili powder, garlic powder, and cumin; stir to coat.
  3. Pour in chicken stock, bring to a boil, then reduce heat and simmer 30–40 minutes until chicken is tender.
  4. Remove chicken, shred, and return to pot.
  5. Add hominy and simmer 10 more minutes.
  6. Stir in cilantro, season with salt, pepper, and extra chili powder to taste.
  7. Serve hot with lime wedges and optional toppings (shredded cabbage, radish, avocado).
