Chicken Pozole Soup

Recipe (Serves 8–10)
Instructions
- In a large pot, sauté onion in olive oil until soft.
- Add chicken, bay leaves, chili powder, garlic powder, and cumin; stir to coat.
- Pour in chicken stock, bring to a boil, then reduce heat and simmer 30–40 minutes until chicken is tender.
- Remove chicken, shred, and return to pot.
- Add hominy and simmer 10 more minutes.
- Stir in cilantro, season with salt, pepper, and extra chili powder to taste.
- Serve hot with lime wedges and optional toppings (shredded cabbage, radish, avocado).
