Wicked Good Pumpkin Bars

Brown Butter. Maple Frosting. Absolutely No Self-Control.A frosted pumpkin bar on a white plate, piped with maple cream cheese frosting and dusted with cinnamon

Scary Good. Ridiculously Easy.

October in Minnesota has a way of making perfectly reasonable people buy twelve pumpkins, put cinnamon in everything, and call a sweatshirt an outfit.

We're not judging. We're baking.

Meet your new fall obsession: soft, warmly spiced pumpkin bars topped with maple cream cheese frosting, a little brown butter magic, and just enough flaky salt to make things interesting.

Sweet. Spiced. A little spooky. Dangerously good.

The Recipe (Makes 24 Bars)

Ingredients

For the Pumpkin Bars

4 large eggs
1 cup granulated sugar
½ cup packed brown sugar
1 cup vegetable oil
1 can (15 oz) 100% pure pumpkin purée (not pumpkin pie filling)
2 cups all-purpose flour
2 tsp baking powder
1 tsp baking soda
2 tsp ground cinnamon
½ tsp ground ginger
¼ tsp ground nutmeg
½ tsp salt
1 tsp vanilla extract

For the Brown Butter Maple Frosting

8 oz cream cheese, softened
4 tbsp unsalted butter
2 cups powdered sugar
2 tbsp pure maple syrup
½ tsp vanilla extract
Pinch of salt

To Finish

Light dusting of cinnamon
Flaky sea salt, optional

Directions

  1. Heat Things Up: Preheat oven to 350°F. Grease a 9×13-inch baking pan or line it with parchment paper.
  2. Make Some Pumpkin Magic: Whisk together eggs, both sugars, oil, pumpkin purée, and vanilla until smooth.
  3. Bring on the Spice: In a separate bowl, combine flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt. Gently fold into the pumpkin mixture until just combined.
  4. Bake Until Bewitching: Pour batter into the prepared pan and bake for 30–38 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Cool completely.
  5. Brown the Butter: Melt butter in a small saucepan over medium heat, stirring until golden brown with a nutty aroma. Remove from heat and let cool until no longer warm but still soft.
  6. Whip Up the Frosting: Beat cream cheese with the cooled brown butter until smooth. Add powdered sugar, maple syrup, vanilla, and a pinch of salt. Beat until fluffy.
  7. The Grand Finale: Spread frosting over the cooled bars. Dust lightly with cinnamon and add a tiny sprinkle of flaky sea salt if desired. Chill briefly for cleaner slices.
  8. Cut & Disappear: Slice into 24 bars. Watch how quickly they vanish.

Hen House Tips

Use pure pumpkin purée, not pumpkin pie filling. We're in charge of the spices here
Don't overmix the batter. Gentle mixing keeps the bars soft and tender
Let the brown butter cool before adding it to the cream cheese
Frost only when the bars are completely cool. Melted frosting is a Halloween horror story nobody asked for
Make them a day ahead. The spices get even better overnight

The Secret Ingredient? Brown Butter.

Pumpkin and cinnamon already have a pretty serious fall relationship.

But brown butter changes everything.

A few minutes in a saucepan transform ordinary butter into something nutty, golden, and almost caramel-like.

Add maple syrup and cream cheese, and suddenly that frosting deserves its own fan club.
